Classic Mug Cake
Get a microwavable mug and cover the inside with butter or coconut oil. Then put all the ingredance and mix together very well with a fork or spoon. Place in microwave and cook for 2 minutes, after let it cool down and then put on a plate and top with fruit and whatever else you want! Enjoy!
- 1 large egg

- 2 tablespoons white rice flour or whole wheat flour

3 Tbsp Chia Seeds (my favourite is Bob's Red Mill, you can buy it at most stores including Whole Foods)
Mix Chia Seeds and the soy milk together and stir for the first ten minutes and then leave it in the Fridge until the mixture looks Pudding like. Top with whatever you like but I topped it with sliced up banana's! Xx

Chickpea salad
Salad:
1/2 cup Chickpeas, drained and washed
1 Whole Cucumber, Sliced in quarters chopped into smaller pieces
2 cubes of Feta
Dressing:
2 tsp Olive Oil
2tsp Balsamic Oil
Pinch of Salt
Layer the salad so that it goes Cucumber, Chickpeas and then the Feta. For the Dressing pour the Olive Oil and the Balsamic Oil in together then mix with fork and put in the pinch of salt. Pour dressing over the salad and enjoy!

The Creamsicle without the Cream!
One Whole Orange
One cup of low Fat Vanilla Greek Yogurt
Peel the orange and then cut into pieces so that they are circles! Place in small bowl containing the vanilla greek yogurt, once covered place on a sheet (or plate) with waxy paper and place into the freezer. Leave in the freeze for four hours depending on how solid you want it to be. Enjoy! xx

2 Frozen Banana's
2 tablespoons of Cocoa Powder
1 Cup Almond Milk
Blend together and place in dish! I usually serve with a tiny bit of unsweetened coconut on top! Enjoy!

Everyone loves overnight oats, personally it is one of my favorites! Its a on the go food that you can have in a mason jar and top with any of your favorites!
1/3 Cup Oats (I use the Quakers Quick Oats)
1/3 Cup French Vanilla Yogurt (you have use either full fat or low)
1/2 Cup Almond Milk
1/2 a Banana
A pinch of both Cinnamon and Chia Seeds
Stir everything together in a bowl. Place in a fridge overnight and in the morning add your favorite toppings. I personally use Peanut butter and Walnuts!

1 Tbsp Shredded Coconut
1 Cup Coconut water

Banana Buckwheat Porridge
I got this from one of my favorite instagram girls, @whatjesseats, tons of great stuff!
1/2 Cup Water
1/2 Cup of Almond Milk
1/2 Buckwheat Groats
1 Banana
1/2 Tsb Vanilla
Chia seeds and Cinnamon to taste
Bring the water and the almond milk to a boil, once its at a boil add the buckwheat groats and reduce heat to medimum low and cover. Cook until most of the liquid is absorbed and then add the banana (mashed). Stir, then keep stirring as you add vanilla, cinnamon and chia seeds. Let the banana caramalize a bit then serve when its thicken!
